How to cook “focaccette” – Lunigiana (Tuscany)

In this video you can see how ‘focaccette’, a typical speciality of Lunigiana, are cooked. The focacette are made from a dough of corn and wheat flour without yeast, placed on terracotta plates (“testi”) which have been heated on a wood fire and in a few minutes they are ready to be accompanied by sausages, cheeses and much more….

In questo video si possono vedere le fasi di preparazione delle focaccette, una specialità tipica della Lunigiana. Poste su piatti di terracotta, chiamati “testi”, scaldati su fuoco a legna, le focaccette sono fatte di un impasto di farina di grano e farina di granturco. In poco minuti, sono pronte per essere accompagnate da salumi, formaggi e altro ancora…

The farm Il Ghiottone (“The Wolverine”) is proposed as one of the most typical restaurants of the Lunigiana, specialized in traditional cuisine. Born as “Chez le paysan”, it has a new management since July 2000. Franca and Ilda were launched with passion in this business whose strength is undoubtedly cuisine, which respects and enhances the typical tradition of Lunigiana.
At guests wishing to enjoy a typical local specialties, we suggest the famous “focaccette” without yeast, accompanied by sausages and cheeses and much more. All meats, except for the ham comes from Parma, are prepared in the holding farm.
The farmhouse, in addition to the restaurant, offers guests three double bedrooms, each with its own bathroom, at a very affordable price.

L’agriturismo Il Ghiottone si propone come uno dei ristoranti più tipici della Lunigiana, soprattutto per la cucina tradizionale, dai primi ai dolci. Nato come “Chez le paysan”, ha ripreso a funzionare con una nuova gestione dal luglio del 2000. Franca e Ilda si sono lanciate con passione in questa attività il cui punto di forza è senza dubbio la cucina, che rispetta ed esalta la tipica tradizione lunigianese.
Per chi desidera gustare una specialità tipicamente locale consigliamo le famose focaccette senza lievito, accompagnate da salumi e formaggi nostrali. Tutti i salumi, ad eccezione del prosciutto che proviene da Parma, sono preparati direttamente nell’azienda agrituristica.
La struttura, oltre al ristorante, mette a disposizione degli ospiti tre camere matrimoniali, ognuna con il proprio bagno, ad un prezzo molto conveniente.
